Nothing stops you from running a business under an unregistered name. But without a federal registration, your rights are limited to common law protection: generally just the specific geographic area where you can prove you've actually been using the mark. A business two states over could legally use the same name, and you'd have no standing to stop them.
It isn't only about someone copying you. It's the reverse. Without a registration search and filing of your own, you have no way of knowing whether you're already infringing on someone else's registered mark. Businesses often discover this only after receiving a cease-and-desist letter, sometimes years and significant marketing spend into building the brand.
